Place fish in a large resealable plastic bag with the soy sauce mixture, seal, and turn to coat. Cut into 1/4-inch cubes (about 2 cups) and place in large strainer set over bowl.&lt;br /&gt;Cut off ends from remaining cucumbers and cut in halflengthwise. Scoop out seeds. Cut halves crosswise into 1/4-inch-thick slices (about 2 1/2 to 3 cups); add to strainer. Sprinkle with 1/2 teaspoons salt; let drain 30 minutes.&lt;br /&gt;&lt;br /&gt;Heat 1 tablespoon oil in heavy medium skillet over medium-high heat. Add peanuts; saute until golden. Heat oil in heavy medium skillet over medium-high heat. Add chicken to skillet and saute until golden, about 4 minutes per side. Add garlic and stir 30 seconds. Add wine, cream, and tomatoes; bring to boil. Reduce heat to medium-low, cover skillet, and simmer until chicken is just cooked through, about 3 minutes. Transfer chicken to plates. Add basil to sauce in skillet. Increase heat and boil until sauce thickens enough to coat spoon, about 2 minutes. Season sauce to taste with salt and pepper; spoon over chicken and serve.&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="color: orange;"&gt;&lt;span style="color: black;"&gt;&lt;b&gt;Stir-fried sesame asparagus&lt;/b&gt; &lt;i&gt;cooked by Qiong&lt;/i&gt;&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="color: orange;"&gt;&lt;span style="color: black;"&gt; &lt;/span&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="color: orange;"&gt;&lt;span style="color: black;"&gt;2 tablespoons soy sauce&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="color: orange;"&gt;&lt;span style="color: black;"&gt;2 teaspoons sugar&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="color: orange;"&gt;&lt;span style="color: black;"&gt;2 tablespoons Asian sesame oil&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="color: orange;"&gt;&lt;span style="color: black;"&gt;2 garlic cloves, chopped&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="color: orange;"&gt;&lt;span style="color: black;"&gt;2 pounds asparagus, ends trimmed, cut on diagonal into 2-inch-long pieces&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="color: orange;"&gt;&lt;span style="color: black;"&gt;4 teaspoons sesame seeds&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="color: orange;"&gt;&lt;span style="color: black;"&gt;&lt;b style="color: orange;"&gt;STIR&lt;/b&gt; soy sauce and sugar in small bowl until sugar dissolves. Heat oil in heavy large skillet over medium-high heat. Add garlic and stir 15 seconds. Add asparagus and stir-fry until crisp-tender, about 4 minutes. Add soy mixture and toss until asparagus is coated, about 1 minute longer. Season to taste with salt and pepper. Season to taste with salt and pepper. Spread cheese mixture lengthwise over half of each chicken piece. Tuck short ends in. Starting at one long side, roll chicken up into tight cylinders. Tie ends with kitchen string to secure. Dip chicken in egg, allowing excess to drip back into bowl. Roll in breadcrumbs, shaking off excess. &lt;i&gt;(Can be prepared 4 hours ahead. Cover and refrigerate.)&lt;/i&gt;&lt;/span&gt; &lt;/div&gt;&lt;div style="color: orange; text-align: left;"&gt;&lt;b&gt;PREHEAT &lt;/b&gt;&lt;span style="color: black;"&gt;oven to 350F. Place chicken in 8-inch square baking dish. Pour 2 tablespoons melted butter over. Bake until cooked through, about 20 minutes.&lt;/span&gt;&lt;/div&gt;&lt;div style="color: orange; text-align: left;"&gt;&lt;span style="color: black;"&gt;&lt;b&gt;FOR MUSHROOM-WINE SAUCE: &lt;/b&gt;Meanwhile, melt 1/4 cup butter in heavy large skillet over medium heat. Add mushrooms and saute until tender, about 8 minutes. Add wine and boil 3 minutes. Add broth and boil until liquid is reduced by half, about 6 minutes. Remove from heat and swirl in chilled unsalted butter, 1 piece at a time. Season sauce to taste with salt and pepper.&lt;/span&gt;&lt;/div&gt;&lt;div style="color: orange; text-align: left;"&gt;&lt;span style="color: black;"&gt;&lt;b&gt;&lt;span style="color: orange;"&gt;REMOVE&lt;/span&gt;&lt;/b&gt;&lt;span style="color: orange;"&gt;&lt;span style="color: black;"&gt; string from chicken. Cut rolls crosswise into 1/2-inch-thick rounds. Fan on plates. Add mushrooms and saute until tender, about 5 minutes. Transfer mushrooms to medium bowl. Melt remaining 3 tablespoons butter in same skillet. Add shallots and garlic; saute until soft, about 2 minutes. Add green beans and toss to coat. Pour broth over green bean mixture. Cover and simmer until liquid evaporates and beans are crisp-tender, about 10 minutes. Stir in shiitake mushrooms. Season to taste with salt and pepper.
